Stuffed Squid with Lemongrass (Cumi-Cumi Isi Serai)

Ingredients

  • 4 medium-sized squid, cleaned and tentacles removed
  • 2 lemongrass stalks, bruised and cut into 2-inch pieces
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cooking oil
  • 1 cup water
  • Fresh cilantro leaves for garnish

Instructions

  1. In a pan, heat 1 tablespoon of cooking oil over medium heat. Add the chopped onion and garlic, and sauté until fragrant.
  2. Add the turmeric powder, coriander powder, salt, and black pepper. Stir well to combine.
  3. Add the squid tentacles and cook for 2-3 minutes. Remove from heat and let it cool.
  4. Stuff the squid tubes with the cooked tentacles mixture and lemongrass pieces.
  5. In a separate pan, heat the remaining cooking oil over medium heat. Add the stuffed squid and sear until lightly browned.
  6. Pour in the water and let it simmer for 15-20 minutes, or until the squid is tender and the flavors are infused.
  7. Transfer the stuffed squid to a serving plate, garnish with fresh cilantro leaves, and serve hot.
