Ingredients
- 4 medium-sized squid, cleaned and tentacles removed
- 2 lemongrass stalks, bruised and cut into 2-inch pieces
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons cooking oil
- 1 cup water
- Fresh cilantro leaves for garnish
Instructions
- In a pan, heat 1 tablespoon of cooking oil over medium heat. Add the chopped onion and garlic, and sauté until fragrant.
- Add the turmeric powder, coriander powder, salt, and black pepper. Stir well to combine.
- Add the squid tentacles and cook for 2-3 minutes. Remove from heat and let it cool.
- Stuff the squid tubes with the cooked tentacles mixture and lemongrass pieces.
- In a separate pan, heat the remaining cooking oil over medium heat. Add the stuffed squid and sear until lightly browned.
- Pour in the water and let it simmer for 15-20 minutes, or until the squid is tender and the flavors are infused.
- Transfer the stuffed squid to a serving plate, garnish with fresh cilantro leaves, and serve hot.
