Stuffed Tostones, or Tostones Rellenos, are a popular Venezuelan dish made with fried green plantains that are stuffed with delicious fillings. This recipe adds a unique twist to the traditional tostones, making them a perfect appetizer or snack for any occasion.

Stuffed Tostones (tostones Rellenos)

Ingredients

  • 2 green plantains, peeled and sliced into 1-inch thick rounds
  • 1 cup of cooked shredded chicken
  • 1 cup of black beans, drained and rinsed
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of diced tomatoes
  • 1/4 cup of chopped cilantro
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large skillet, heat the oil over medium-high heat. Fry the plantain slices for 2-3 minutes on each side, until they are golden and tender. Remove from the skillet and place them on a paper towel to drain excess oil.
  2. Using a tostonera or the back of a heavy glass, flatten each fried plantain slice to about half its original thickness.
  3. Return the flattened plantains to the skillet and fry for an additional 2-3 minutes on each side, until they are crispy and golden brown. Remove from the skillet and drain on a paper towel.
  4. In a bowl, mix the shredded chicken, black beans, mozzarella cheese, diced tomatoes, and chopped cilantro. Season with salt and pepper to taste.
  5. Place a spoonful of the chicken and bean mixture on top of each tostone.
  6. Serve the stuffed tostones warm and enjoy!
