Ingredients
- 4 medium zucchinis
- 1 pound ground beef
- 1 cup rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center.
- In a bowl, mix the ground beef, rice, onion, garlic, paprika, cumin, salt, and pepper.
- Stuff the hollowed-out zucchinis with the meat and rice mixture.
- Place the stuffed zucchinis in a baking dish, drizzle with olive oil, and cover with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the zucchinis are tender and the filling is cooked through.
