Ingredients

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center.
  3. In a bowl, mix the ground beef, rice, onion, garlic, paprika, cumin, salt, and pepper.
  4. Stuff the hollowed-out zucchinis with the meat and rice mixture.
  5. Place the stuffed zucchinis in a baking dish, drizzle with olive oil, and cover with foil.
  6. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the zucchinis are tender and the filling is cooked through.
