Stuffed Zucchini Boats (كوسا محشية)

Ingredients

  • 4 large zucchinis
  • 1 cup of rice
  • 250g of ground meat (beef or lamb)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cinnamon
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create boat-like shapes.
  3. In a bowl, mix the rice, ground meat, onion, tomatoes, garlic, cumin, paprika, cinnamon, salt, and pepper.
  4. Stuff the zucchini boats with the rice and meat mixture.
  5. Place the stuffed zucchinis in a baking dish, drizzle with olive oil, and cover with foil.
  6. Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until the zucchinis are tender and the filling is cooked through.
  7. Garnish with fresh parsley before serving.
