Ingredients
- 4 large zucchinis
- 1 cup of rice
- 250g of ground meat (beef or lamb)
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 1/2 teaspoon of cinnamon
- Salt and pepper to taste
- 2 tablespoons of olive oil
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create boat-like shapes.
- In a bowl, mix the rice, ground meat, onion, tomatoes, garlic, cumin, paprika, cinnamon, salt, and pepper.
- Stuff the zucchini boats with the rice and meat mixture.
- Place the stuffed zucchinis in a baking dish, drizzle with olive oil, and cover with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until the zucchinis are tender and the filling is cooked through.
- Garnish with fresh parsley before serving.
