Ingredients

- 1 cucumber, sliced

Instructions
- Preheat the oven to 375°F (190°C).
- Pound the chicken breasts to an even thickness, then season with salt and pepper.
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
- Dredge each chicken breast in the flour, then dip into the beaten eggs, and coat with breadcrumbs.
- Heat the vegetable oil in a large skillet over medium heat. Cook the breaded chicken breasts for 3-4 minutes on each side, until golden brown and cooked through.
- Transfer the cooked chicken to a baking sheet and finish in the preheated oven for 10 minutes.
- In a large bowl, toss the mixed salad greens, cucumber, red onion, and cherry tomatoes.
- Divide the salad among serving plates and top with sliced breaded chicken.
- Sprinkle with pumpkin seeds and serve immediately.
