Su Xie (steamed Crab With Garlic Sauce)
Su Xie, or Steamed Crab with Garlic Sauce, is a classic dish from Putian (Henghwa) Cuisine, known for its fresh and light flavors. This dish highlights the natural sweetness of crab meat, complemented by the aromatic and savory garlic sauce.

Ingredients
- 4 fresh crabs, cleaned and halved
- 6 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon rice wine
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
- 2 green onions, finely chopped
- 1 tablespoon vegetable oil
- 1 teaspoon cornstarch
- 1 tablespoon water
Instructions
- Place the crab halves in a heatproof dish that fits inside a steamer.
- In a small bowl, mix together the minced garlic, soy sauce, rice wine, sesame oil, sugar, and white pepper. Pour this sauce over the crab halves, making sure to coat them evenly.
- Sprinkle the chopped green onions over the crab.
- Steam the crab over high heat for 12-15 minutes, or until the crab is fully cooked.
- While the crab is steaming, heat the vegetable oil in a small saucepan. Once hot, pour the oil over the green onions to release their aroma.
- In a separate bowl, mix the cornstarch with water to create a slurry. Pour this slurry into the hot oil and green onions, stirring constantly to create a thickened sauce.
- Once the crab is cooked, carefully pour the hot garlic sauce over the steamed crab.
- Serve the Su Xie hot, with steamed rice or noodles on the side.
