Suan La Dou Fu Tang, also known as Spicy and Sour Soup with Tofu, is a classic dish from Putian (Henghwa) Cuisine, known for its bold and vibrant flavors.
Ingredients
- 1 block (14 oz) firm tofu, cut into cubes
- 4 cups vegetable broth
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon chili garlic sauce
- 1 tablespoon cornstarch
- 2 eggs, beaten
- 1/2 cup sliced mushrooms
- 1/4 cup sliced bamboo shoots
- 1/4 cup sliced green onions
- Salt to taste
- White pepper to taste
Instructions
- In a pot, bring the vegetable broth to a boil.
- Add the tofu, soy sauce, rice vinegar, and chili garlic sauce. Simmer for 5 minutes.
- In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Stir the slurry into the soup to thicken.
- Slowly pour the beaten eggs into the soup while stirring gently to create egg ribbons.
- Add the mushrooms, bamboo shoots, and green onions. Simmer for an additional 5 minutes.
- Season with salt and white pepper to taste.
