Ingredients

  • 1 block (14 oz) firm tofu, cut into cubes
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon chili garlic sauce
  • 1 tablespoon cornstarch
  • 2 eggs, beaten
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced bamboo shoots
  • 1/4 cup sliced green onions
  • Salt to taste
  • White pepper to taste

Instructions

  1. In a pot, bring the vegetable broth to a boil.
  2. Add the tofu, soy sauce, rice vinegar, and chili garlic sauce. Simmer for 5 minutes.
  3. In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Stir the slurry into the soup to thicken.
  4. Slowly pour the beaten eggs into the soup while stirring gently to create egg ribbons.
  5. Add the mushrooms, bamboo shoots, and green onions. Simmer for an additional 5 minutes.
  6. Season with salt and white pepper to taste.
