Ingredients

  • 1 pound fresh green beans, trimmed and cut into 2-inch pieces
  • 2 tablespoons vegetable oil
  • 3-4 dried red chili peppers, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon sugar
  • Salt to taste
  • 1 teaspoon cornstarch dissolved in 2 tablespoons water

Instructions

  1. Heat the vegetable oil in a wok or large skillet over high heat.
  2. Add the dried red chili peppers, garlic, and ginger. Stir-fry for 30 seconds until fragrant.
  3. Add the green beans and stir-fry for 2-3 minutes until they are tender-crisp.
  4. In a small bowl, mix together the soy sauce, rice vinegar, sugar, and salt. Pour the sauce over the green beans and stir to combine.
  5. Add the cornstarch mixture and stir-fry for another 1-2 minutes until the sauce thickens and coats the green beans.
