Ingredients

  • 100g glass noodles
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 2-3 green onions, thinly sliced
  • 1 red chili, thinly sliced
  • 1/4 cup soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon chili oil
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • Salt to taste
  • Pepper to taste

Instructions

  1. Soak the glass noodles in hot water for about 5 minutes or until they are soft. Drain and set aside.
  2. In a small bowl, mix together soy sauce, rice vinegar, sugar, sesame oil, chili oil, minced ginger, and minced garlic to make the dressing.
  3. In a large mixing bowl, combine the soaked glass noodles, julienned cucumber, julienned carrot, sliced green onions, and sliced red chili.
  4. Pour the dressing over the noodle and vegetable mixture. Toss until everything is well coated.
  5. Season with salt and pepper to taste.
