Ingredients
- 100g glass noodles
- 1 cucumber, julienned
- 1 carrot, julienned
- 2-3 green onions, thinly sliced
- 1 red chili, thinly sliced
- 1/4 cup soy sauce
- 3 tablespoons rice vinegar
- 2 tablespoons sugar
- 1 tablespoon sesame oil
- 1 teaspoon chili oil
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- Salt to taste
- Pepper to taste
Instructions
- Soak the glass noodles in hot water for about 5 minutes or until they are soft. Drain and set aside.
- In a small bowl, mix together soy sauce, rice vinegar, sugar, sesame oil, chili oil, minced ginger, and minced garlic to make the dressing.
- In a large mixing bowl, combine the soaked glass noodles, julienned cucumber, julienned carrot, sliced green onions, and sliced red chili.
- Pour the dressing over the noodle and vegetable mixture. Toss until everything is well coated.
- Season with salt and pepper to taste.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
