Ingredients
- 200g glass noodles
- 4 cups vegetable broth
- 2 tbsp soy sauce
- 2 tbsp Chinkiang vinegar
- 1 tbsp chili oil
- 1 tsp Sichuan peppercorns
- 2 green onions, thinly sliced
- 1/2 cup sliced mushrooms
- 1/2 cup firm tofu, diced
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tsp sugar
- Salt to taste
Instructions
- Soak the glass noodles in hot water for 10 minutes, then drain and set aside.
- In a pot, bring the vegetable broth to a simmer over medium heat.
- Add the soy sauce, Chinkiang vinegar, chili oil, Sichuan peppercorns, green onions, mushrooms, tofu, garlic, ginger, and sugar to the pot.
- Simmer for 10 minutes, then add the soaked glass noodles and cook for an additional 5 minutes.
- Season with salt to taste and serve hot.
