Ingredients

  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 3-4 dried red chilies, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 2 tablespoons Chinkiang vinegar
  • 1 tablespoon sugar
  • 1 teaspoon Sichuan peppercorns, toasted and ground
  • Salt to taste
  • 1/2 cup chicken broth

Instructions

  1. Heat the vegetable oil in a wok or large skillet over high heat.
  2. Add the dried red chilies, garlic, and ginger. Stir-fry for 30 seconds until fragrant.
  3. Add the chicken pieces and stir-fry until they are no longer pink.
  4. Stir in the soy sauce, Chinkiang vinegar, sugar, Sichuan peppercorns, and salt.
  5. Pour in the chicken broth and bring to a simmer. Cook for 5-7 minutes until the sauce thickens.
  6. Garnish with chopped green onions and serve hot.
