Ingredients
- 500g chicken thighs, cut into bite-sized pieces
- 2 tomatoes, cut into wedges
- 1 onion, thinly sliced
- 3-4 dried red chilies, chopped
- 2 cloves garlic, minced
- 1 piece ginger (about 1 inch), sliced
- 4 cups chicken broth
- 3 tablespoons soy sauce
- 3 tablespoons rice vinegar
- 1 tablespoon sugar
- Salt to taste
- 2 tablespoons cornstarch mixed with 3 tablespoons water
- 2 green onions, chopped
- 1 tablespoon sesame oil
Instructions
- In a pot, heat some oil over medium heat. Add the dried red chilies, garlic, and ginger. Sauté until fragrant.
- Add the chicken pieces and cook until they are no longer pink.
- Pour in the chicken broth and bring to a boil. Add the tomatoes, onions, soy sauce, rice vinegar, and sugar. Simmer for 15-20 minutes.
- Stir in the cornstarch mixture and cook until the soup thickens slightly.
- Season with salt to taste. Remove from heat and stir in the green onions and sesame oil.
- Serve hot and enjoy!
