Ingredients

  • 500g chicken thighs, cut into bite-sized pieces
  • 2 tomatoes, cut into wedges
  • 1 onion, thinly sliced
  • 3-4 dried red chilies, chopped
  • 2 cloves garlic, minced
  • 1 piece ginger (about 1 inch), sliced
  • 4 cups chicken broth
  • 3 tablespoons soy sauce
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • Salt to taste
  • 2 tablespoons cornstarch mixed with 3 tablespoons water
  • 2 green onions, chopped
  • 1 tablespoon sesame oil

Instructions

  1. In a pot, heat some oil over medium heat. Add the dried red chilies, garlic, and ginger. Sauté until fragrant.
  2. Add the chicken pieces and cook until they are no longer pink.
  3. Pour in the chicken broth and bring to a boil. Add the tomatoes, onions, soy sauce, rice vinegar, and sugar. Simmer for 15-20 minutes.
  4. Stir in the cornstarch mixture and cook until the soup thickens slightly.
  5. Season with salt to taste. Remove from heat and stir in the green onions and sesame oil.
  6. Serve hot and enjoy!
