Ingredients

  • 500g beef, thinly sliced
  • 400g fresh noodles
  • 4 cups beef broth
  • 3 tbsp soy sauce
  • 2 tbsp Chinkiang vinegar
  • 2 tbsp chili oil
  • 2 tbsp Sichuan peppercorns
  • 4 cloves garlic, minced
  • 2-inch ginger, sliced
  • 2 green onions, chopped
  • 1 tsp sugar
  • Salt to taste

Instructions

  1. In a pot, heat the chili oil and Sichuan peppercorns over medium heat for 2 minutes.
  2. Add the garlic, ginger, and green onions, and sauté for 3 minutes.
  3. Add the beef slices and cook until browned.
  4. Pour in the beef broth, soy sauce, Chinkiang vinegar, and sugar. Bring to a boil, then reduce heat and simmer for 45 minutes.
  5. Cook the fresh noodles according to package instructions.
