Ingredients
- 2 large eggplants, cut into bite-sized pieces
- 3 cloves garlic, minced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon cornstarch
- 1 teaspoon chili flakes
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- In a small bowl, mix together soy sauce, rice vinegar, sugar, cornstarch, and chili flakes to make the sauce. Set aside.
- Heat vegetable oil in a wok or large skillet over medium-high heat. Add the minced garlic and stir-fry for 30 seconds.
- Add the eggplant pieces to the wok and stir-fry for 5-6 minutes, or until the eggplant is tender.
- Pour the sauce over the eggplant and stir to coat the eggplant evenly. Cook for an additional 2-3 minutes.
- Season with salt to taste and garnish with chopped green onions.
- Remove from heat and serve hot.
