Ingredients

  • 2 large eggplants, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon chili flakes
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. In a small bowl, mix together soy sauce, rice vinegar, sugar, cornstarch, and chili flakes to make the sauce. Set aside.
  2. Heat vegetable oil in a wok or large skillet over medium-high heat. Add the minced garlic and stir-fry for 30 seconds.
  3. Add the eggplant pieces to the wok and stir-fry for 5-6 minutes, or until the eggplant is tender.
  4. Pour the sauce over the eggplant and stir to coat the eggplant evenly. Cook for an additional 2-3 minutes.
  5. Season with salt to taste and garnish with chopped green onions.
  6. Remove from heat and serve hot.
