Ingredients
- 2 cups all-purpose flour
- 1 cup water
- 1/2 lb ground pork
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 green onions, finely chopped
- 2 tablespoons soy sauce
- 2 tablespoons Chinkiang vinegar
- 1 tablespoon chili oil
- 1 teaspoon sugar
- Salt to taste
Instructions
- In a large bowl, mix the flour and water to form a dough. Knead the dough for 5 minutes, then cover and let it rest for 30 minutes.
- In a separate bowl, combine the ground pork, garlic, ginger, green onions, soy sauce, and salt. Mix well to combine.
- Divide the dough into small pieces and roll each piece into a thin circle. Place a spoonful of the pork filling in the center of each circle and pleat the edges to seal the dumplings.
- In a pot, bring water to a boil. Place the dumplings in the boiling water and cook for 5-7 minutes, or until they float to the surface.
- While the dumplings are cooking, prepare the soup by combining Chinkiang vinegar, chili oil, sugar, and salt in a small bowl.
- Once the dumplings are cooked, transfer them to serving bowls and pour the sour and spicy soup over them.
