Ingredients

  • 2 cups all-purpose flour
  • 1 cup water
  • 1/2 lb ground pork
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green onions, finely chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons Chinkiang vinegar
  • 1 tablespoon chili oil
  • 1 teaspoon sugar
  • Salt to taste

Instructions

  1. In a large bowl, mix the flour and water to form a dough. Knead the dough for 5 minutes, then cover and let it rest for 30 minutes.
  2. In a separate bowl, combine the ground pork, garlic, ginger, green onions, soy sauce, and salt. Mix well to combine.
  3. Divide the dough into small pieces and roll each piece into a thin circle. Place a spoonful of the pork filling in the center of each circle and pleat the edges to seal the dumplings.
  4. In a pot, bring water to a boil. Place the dumplings in the boiling water and cook for 5-7 minutes, or until they float to the surface.
  5. While the dumplings are cooking, prepare the soup by combining Chinkiang vinegar, chili oil, sugar, and salt in a small bowl.
  6. Once the dumplings are cooked, transfer them to serving bowls and pour the sour and spicy soup over them.
