Ingredients
- 4 cups chicken or vegetable broth
- 1/2 cup shiitake mushrooms, sliced
- 1/2 cup bamboo shoots, sliced
- 1/2 cup firm tofu, diced
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon chili paste
- 1 teaspoon sesame oil
- 1/4 cup cornstarch dissolved in 1/4 cup water
- 2 eggs, beaten
- Salt and pepper to taste
- Green onions, thinly sliced, for garnish
Instructions
- In a large pot, bring the broth to a simmer over medium heat.
- Add the shiitake mushrooms, bamboo shoots, and tofu to the pot. Cook for 5 minutes.
- Stir in the soy sauce, rice vinegar, chili paste, and sesame oil. Simmer for another 5 minutes.
- Slowly pour in the cornstarch mixture, stirring constantly until the soup thickens.
- Drizzle the beaten eggs into the soup while stirring gently to create ribbons of egg.
- Season with salt and pepper to taste.
- Serve the Suan La Tang hot, garnished with sliced green onions.
