Ingredients

  • 500g pork belly, cut into cubes
  • 200g sour bamboo shoots, sliced
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp ground white pepper
  • 2 cups water

Instructions

  1. Heat a wok or large skillet over medium heat. Add the pork belly and cook until browned and crispy. Remove the pork from the wok and set aside.
  2. In the same wok, add the garlic, ginger, and green onions. Stir-fry until fragrant.
  3. Add the sour bamboo shoots and continue to stir-fry for 2-3 minutes.
  4. Return the pork to the wok. Add the soy sauce, dark soy sauce, Shaoxing wine, sugar, salt, and white pepper. Stir to combine.
  5. Pour in the water and bring to a boil. Reduce heat to low, cover, and simmer for 1 hour or until the pork is tender.
  6. Uncover the wok and continue to simmer until the sauce thickens.
  7. Transfer to a serving dish and garnish with additional green onions, if desired. Serve hot with steamed rice.
