Suan Sun Rou, or Braised Pork with Sour Bamboo Shoots, is a classic dish from Guizhou Cuisine known for its unique combination of flavors. The tender pork is braised with sour bamboo shoots, creating a deliciously tangy and savory dish that pairs perfectly with steamed rice.
Ingredients
- 500g pork belly, cut into cubes
- 200g sour bamboo shoots, sliced
- 3 cloves garlic, minced
- 1 thumb-sized ginger, sliced
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp ground white pepper
- 2 cups water
Instructions
- Heat a wok or large skillet over medium heat. Add the pork belly and cook until browned and crispy. Remove the pork from the wok and set aside.
- In the same wok, add the garlic, ginger, and green onions. Stir-fry until fragrant.
- Add the sour bamboo shoots and continue to stir-fry for 2-3 minutes.
- Return the pork to the wok. Add the soy sauce, dark soy sauce, Shaoxing wine, sugar, salt, and white pepper. Stir to combine.
- Pour in the water and bring to a boil. Reduce heat to low, cover, and simmer for 1 hour or until the pork is tender.
- Uncover the wok and continue to simmer until the sauce thickens.
- Transfer to a serving dish and garnish with additional green onions, if desired. Serve hot with steamed rice.
