Succulent Stuffed Grape Leaves (Σάρκαρα γεμιστά φύλλα αμπελιού)
Σάρκαρα γεμιστά φύλλα αμπελιού, or Succulent Stuffed Grape Leaves, are a traditional dish from Komi cuisine. These delicious grape leaves are filled with a flavorful mixture of ground meat, rice, and herbs, creating a mouthwatering appetizer or main course.
Ingredients
- 20 grape leaves, rinsed and drained
- 1 cup ground meat (beef or lamb)
- 1/2 cup rice
- 1 onion, finely chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- In a bowl, mix the ground meat, rice, onion, dill, mint, olive oil, lemon juice, salt, and pepper.
- Place a grape leaf on a flat surface, shiny side down. Trim the stem. Put a spoonful of the meat mixture in the center of the leaf.
- Fold the sides of the leaf over the filling, then roll it up tightly into a small cylinder.
- Repeat with the remaining grape leaves and filling.
- Place the stuffed grape leaves in a pot, seam side down, in a single layer. Add water to cover the grape leaves.
- Place a plate on top of the grape leaves to keep them from floating. Cover the pot and simmer for 45 minutes.
- Remove from heat and let the grape leaves cool before serving.
