Succulent Stuffed Grape Leaves (Σάρκαρα γεμιστά φύλλα αμπελιού)

Ingredients

  • 20 grape leaves, rinsed and drained
  • 1 cup ground meat (beef or lamb)
  • 1/2 cup rice
  • 1 onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the ground meat, rice, onion, dill, mint, olive oil, lemon juice, salt, and pepper.
  2. Place a grape leaf on a flat surface, shiny side down. Trim the stem. Put a spoonful of the meat mixture in the center of the leaf.
  3. Fold the sides of the leaf over the filling, then roll it up tightly into a small cylinder.
  4. Repeat with the remaining grape leaves and filling.
  5. Place the stuffed grape leaves in a pot, seam side down, in a single layer. Add water to cover the grape leaves.
  6. Place a plate on top of the grape leaves to keep them from floating. Cover the pot and simmer for 45 minutes.
  7. Remove from heat and let the grape leaves cool before serving.
