Ingredients
- 1 whole chicken, cut into pieces
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 red bell pepper, sliced
- 1 cup chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 scallions, chopped
- 2 tablespoons fresh cilantro, chopped
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
- In the same pot, sauté the onion and garlic until they are soft and fragrant.
- Add the tomatoes and red bell pepper to the pot, and cook until they start to soften.
- Return the chicken pieces to the pot and pour in the chicken broth. Season with cumin, paprika, salt, and pepper. Cover and simmer for 30 minutes, or until the chicken is cooked through.
- Sprinkle the scallions and cilantro over the stew before serving.
