Sufganiyah, also known as Israeli jelly donuts, are a delicious treat traditionally enjoyed during Hanukkah. These deep-fried donuts are filled with sweet jelly and dusted with powdered sugar, making them a delightful indulgence for the holiday season.

Ingredients

  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1/4 cup granulated sugar
  • 3/4 cup warm milk
  • 2 1/2 cups all-purpose flour
  • 2 large eggs
  • 2 tablespoons unsalted butter, softened
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup fruit jelly or jam (for filling)
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a small bowl, combine the yeast, 1 tablespoon of the sugar, and the warm milk. Let it sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine the flour, remaining sugar, eggs, butter, salt, and nutmeg. Add the yeast mixture and mix until a smooth dough forms.
  3. Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour, or until doubled in size.
  4. On a floured surface, roll out the dough to 1/4 inch thickness. Use a round cutter to cut out circles, then place a small spoonful of jelly in the center of half the circles.
  5. Brush the edges of the jelly-topped circles with water, then place another circle of dough on top. Press the edges to seal the sufganiyot.
  6. Heat the vegetable oil in a deep pot to 350°F (175°C). Carefully place the sufganiyot in the hot oil and fry until golden brown on both sides, about 2-3 minutes per side.
  7. Remove the sufganiyot from the oil and drain on paper towels. Dust with powdered sugar before serving.
