Sugar Free Oatmeal Cookies

Ingredients

  • 1 1/2 cups rolled oats

  • 1/4 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1/4 cup sugar-free maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar-free chocolate chips

Instructions

  1. In a large bowl, mix together the rolled oats, almond flour, baking powder, salt, and cinnamon.
  2. In a separate bowl, whisk together the applesauce, melted coconut oil, sugar-free maple syrup, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until well combined.
  4. Gently fold in the sugar-free chocolate chips.
  5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop the cookie dough onto the prepared baking sheet, using about 2 tablespoons of dough for each cookie.
  7. Flatten the dough slightly with the back of a spoon or your fingers.
