Ingredients
- 1 1/2 cups rolled oats
- 1/2 cup almond flour

- 1/4 cup coconut oil, melted
- 1/4 cup sugar-free maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup sugar-free chocolate chips
Instructions
- In a large bowl, mix together the rolled oats, almond flour, baking powder, salt, and cinnamon.
- In a separate bowl, whisk together the applesauce, melted coconut oil, sugar-free maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Gently fold in the sugar-free chocolate chips.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop the cookie dough onto the prepared baking sheet, using about 2 tablespoons of dough for each cookie.
- Flatten the dough slightly with the back of a spoon or your fingers.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
