Ingredients
- 1 cup chopped dates
- 1 teaspoon baking soda
- 1 1/4 cups boiling water
- 1/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup packed brown sugar
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking dish.
- In a small bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for 5 minutes.
- In a large bowl, cream together the softened butter and granulated sugar. Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine the flour, baking powder, and salt. Gradually add the flour mixture to the wet ingredients, mixing until just combined. Fold in the date mixture.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- While the pudding is baking, prepare the toffee sauce. In a saucepan, combine the brown sugar, heavy cream, and butter. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Remove from heat and stir in the vanilla extract.
- Once the pudding is done, poke holes in the top with a skewer and pour half of the hot toffee sauce over the warm pudding. Let it sit for 5 minutes, then slice and serve with the remaining toffee sauce drizzled on top.
