Sugarloaf Mountain Sticky Toffee Pudding

Ingredients

  • 1 cup chopped dates
  • 1 teaspoon baking soda
  • 1 1/4 cups boiling water
  • 1/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup packed brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking dish.
  2. In a small bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for 5 minutes.
  3. In a large bowl, cream together the softened butter and granulated sugar. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the flour, baking powder, and salt. Gradually add the flour mixture to the wet ingredients, mixing until just combined. Fold in the date mixture.
  5. Pour the batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the pudding is baking, prepare the toffee sauce. In a saucepan, combine the brown sugar, heavy cream, and butter. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Remove from heat and stir in the vanilla extract.
  7. Once the pudding is done, poke holes in the top with a skewer and pour half of the hot toffee sauce over the warm pudding. Let it sit for 5 minutes, then slice and serve with the remaining toffee sauce drizzled on top.
