Ingredients
- 300g smoked eel, skin removed
- 500g new potatoes, boiled and diced
- 1 red onion, thinly sliced
- 2 tbsp fresh dill, chopped
- 3 tbsp sour cream
- 2 tbsp whole grain mustard
- 1 tbsp apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, flake the smoked eel into bite-sized pieces.
- Add the diced potatoes, sliced red onion, and chopped dill to the bowl.
- In a separate small bowl, whisk together the sour cream, mustard, and apple cider vinegar.
- Pour the dressing over the eel and potato mixture and toss gently to coat.
