Sukuma Wiki Stir-fry

Ingredients

  • 1 bunch sukuma wiki, chopped
  • 2 tomatoes, diced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a pan over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds.
  3. Add onions and garlic, and sauté until onions are translucent.
  4. Add turmeric powder and stir to combine.
  5. Add tomatoes and cook until they soften.
  6. Add the chopped sukuma wiki and stir-fry for 5-7 minutes until wilted.
  7. Season with salt and pepper to taste.
  8. Remove from heat and serve hot.
