Sultan's Chicken Korma (Hünkâr Tavuk Korma)

Hünkâr Tavuk Korma, also known as Sultan's Chicken Korma, is a rich and flavorful dish from Turkish cuisine. This creamy and aromatic chicken korma is a perfect combination of tender chicken, fragrant spices, and a velvety sauce.

Sultan's Chicken Korma (Hünkâr Tavuk Korma)

Ingredients

  • 1.5 lbs (700g) chicken, cut into pieces
  • 1 cup plain yogurt
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 1/2 cup cashews, ground into a paste
  • 1/4 cup ghee or butter
  • 1 cinnamon stick
  • 4 green cardamom pods
  • 4 cloves
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup heavy cream
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, marinate the chicken pieces with yogurt and a pinch of salt. Let it marinate for 30 minutes.
  2. In a large pot, heat ghee or butter over medium heat. Add the cinnamon stick, cardamom pods, and cloves. Sauté for a minute until fragrant.
  3. Add the chopped onion and cook until golden brown.
  4. Stir in the minced garlic and grated ginger. Cook for another 2 minutes.
  5. Add the marinated chicken along with any remaining yogurt marinade. Cook for 10 minutes, stirring occasionally.
  6. Now, add the ground cashew paste, ground coriander, ground cumin, turmeric, and cayenne pepper. Mix well and cook for 5 minutes.
  7. Pour in the heavy cream and simmer for another 10-15 minutes until the chicken is cooked through and the sauce has thickened.
  8. Season with salt to taste and garnish with fresh cilantro.
