Sultan's Chicken Korma (Hünkâr Tavuk Korma)
Hünkâr Tavuk Korma, also known as Sultan's Chicken Korma, is a rich and flavorful dish from Turkish cuisine. This creamy and aromatic chicken korma is a perfect combination of tender chicken, fragrant spices, and a velvety sauce.
Ingredients
- 1.5 lbs (700g) chicken, cut into pieces
- 1 cup plain yogurt
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 1/2 cup cashews, ground into a paste
- 1/4 cup ghee or butter
- 1 cinnamon stick
- 4 green cardamom pods
- 4 cloves
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 1/2 cup heavy cream
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, marinate the chicken pieces with yogurt and a pinch of salt. Let it marinate for 30 minutes.
- In a large pot, heat ghee or butter over medium heat. Add the cinnamon stick, cardamom pods, and cloves. Sauté for a minute until fragrant.
- Add the chopped onion and cook until golden brown.
- Stir in the minced garlic and grated ginger. Cook for another 2 minutes.
- Add the marinated chicken along with any remaining yogurt marinade. Cook for 10 minutes, stirring occasionally.
- Now, add the ground cashew paste, ground coriander, ground cumin, turmeric, and cayenne pepper. Mix well and cook for 5 minutes.
- Pour in the heavy cream and simmer for another 10-15 minutes until the chicken is cooked through and the sauce has thickened.
- Season with salt to taste and garnish with fresh cilantro.
