Sultan's Lamb Curry (Hünkâr Kuzu Körili)

Ingredients

  • 1.5 lbs (700g) lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 1 cup (240g) plain yogurt
  • 2 tomatoes, diced
  • 2 tbsp tomato paste
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp ground cinnamon
  • 1/2 tsp cayenne pepper
  • 1/4 cup (60ml) olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the lamb cubes to the pot and brown on all sides.
  3. Stir in the tomato paste, diced tomatoes, cumin, paprika, cinnamon, and cayenne pepper. Season with salt and pepper.
  4. Cover the pot and let the curry simmer for 45-50 minutes, or until the lamb is tender.
  5. Once the lamb is cooked, remove the pot from the heat and stir in the plain yogurt.
  6. Return the pot to low heat and let the curry simmer for an additional 5-10 minutes.
  7. Serve the Sultan's Lamb Curry hot, garnished with fresh parsley.
