Sultan's Lamb Tagine (Hünkâr Kuzu Tajin)
Hünkâr Kuzu Tajin, also known as Sultan's Lamb Tagine, is a traditional Turkish dish that is rich in flavor and history. This slow-cooked lamb tagine is infused with aromatic spices and tender vegetables, creating a hearty and satisfying meal.
Ingredients
- 2 lbs lamb shoulder, cut into chunks
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 red bell pepper, sliced
- 1 cup chicken broth
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp cinnamon
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large tagine or Dutch oven over medium heat.
- Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
- Add the chopped onions to the pot and cook until softened, then add the minced garlic and cook for another minute.
- Stir in the tomato paste, ground cumin, coriander, paprika, and cinnamon, and cook for 2 minutes.
- Return the browned lamb to the pot, then add the sliced carrots, diced potatoes, and red bell pepper.
- Pour in the chicken broth, season with salt and pepper, and bring to a simmer.
- Cover the pot and let the tagine simmer over low heat for 2 hours, or until the lamb is tender.
- Once cooked, garnish with fresh parsley and serve hot.
