Sultan's Saffron Rice (Hünkâr Safranlı Pilavı)
Hünkâr Safranlı Pilavı, also known as Sultan's Saffron Rice, is a traditional Turkish rice dish that is fit for royalty. This aromatic and flavorful rice is a perfect accompaniment to any main course, especially grilled meats or kebabs.
Ingredients
- 2 cups basmati rice
- 3 cups chicken or vegetable broth
- 1/4 teaspoon saffron threads
- 1/4 cup butter
- 1/4 cup slivered almonds
- 1/4 cup currants
- Salt to taste
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Drain well.
- In a small bowl, steep the saffron threads in 2 tablespoons of hot water for 5 minutes.
- In a large pot, melt the butter over medium heat. Add the slivered almonds and sauté until golden brown.
- Add the drained rice to the pot and sauté for 2-3 minutes, stirring constantly.
- Pour in the saffron water and chicken or vegetable broth. Add salt to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork, then gently fold in the currants.
- Transfer the Sultan's Saffron Rice to a serving platter and garnish with additional saffron threads, if desired.
