Sultan's Saffron Rice (Hünkâr Safranlı Pilavı)

Ingredients

  • 2 cups basmati rice
  • 3 cups chicken or vegetable broth
  • 1/4 teaspoon saffron threads
  • 1/4 cup butter
  • 1/4 cup slivered almonds
  • 1/4 cup currants
  • Salt to taste

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Drain well.
  2. In a small bowl, steep the saffron threads in 2 tablespoons of hot water for 5 minutes.
  3. In a large pot, melt the butter over medium heat. Add the slivered almonds and sauté until golden brown.
  4. Add the drained rice to the pot and sauté for 2-3 minutes, stirring constantly.
  5. Pour in the saffron water and chicken or vegetable broth. Add salt to taste.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  7. Fluff the rice with a fork, then gently fold in the currants.
  8. Transfer the Sultan's Saffron Rice to a serving platter and garnish with additional saffron threads, if desired.
