Ingredients
- 1 whole chicken, about 4 lbs
- 2 tablespoons sumac
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lemon, sliced
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix the sumac, olive oil, salt, and black pepper to create a paste.
- Place the chicken in a roasting pan and rub the sumac paste all over the chicken, including under the skin.
- Place the lemon slices inside the cavity of the chicken.
- Roast the chicken in the preheated oven for 1 hour or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving and serving.
