Sundubu
Sundubu is a Korean soft tofu stew that is spicy, savory, and comforting. It is typically made with a variety of ingredients such as tofu, vegetables, and sometimes seafood or meat.
Ingredients
- 1 package of soft tofu
- 1/2 cup of sliced mushrooms
- 1/2 cup of diced zucchini
- 1/4 cup of chopped onion
- 2 cloves of minced garlic
- 1/4 cup of seafood (optional)
- 2 cups of vegetable or seafood broth
- 2 tablespoons of Korean red chili paste (gochujang)
- 1 tablespoon of soy sauce
- 1 teaspoon of sesame oil
- Salt and pepper to taste
- Sliced green onions for garnish
Instructions
- Prepare the ingredients by slicing the mushrooms, dicing the zucchini, chopping the onion, and mincing the garlic.
- In a pot, sauté the onion and garlic until fragrant.
- Add the mushrooms, zucchini, and seafood (if using) to the pot and cook for a few minutes.
- Pour in the broth and bring it to a gentle boil.
- Add the Korean red chili paste, soy sauce, and sesame oil to the pot, then gently add the tofu.
- Simmer for 10-15 minutes, season with salt and pepper, and garnish with sliced green onions before serving.
