Ingredients
- 500g fresh salmon fillet, cut into chunks
- 4 large potatoes, peeled and diced
- 1 onion, finely chopped
- 2 carrots, sliced
- 1 leek, sliced
- 6 cups fish or vegetable broth
- 1 cup heavy cream
- 2 bay leaves
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large pot, sauté the onion, carrots, and leek until softened.
- Add the potatoes, fish or vegetable broth, and bay leaves. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add the salmon chunks and cook for an additional 5-7 minutes until the salmon is cooked through.
- Stir in the heavy cream and season with salt and pepper.
- Remove the bay leaves and serve the soup hot, garnished with fresh dill.
