Ingredients

  • 6 cups fish or vegetable broth
  • 1 cup heavy cream
  • 2 bay leaves

Instructions

  1. In a large pot, sauté the onion, carrots, and leek until softened.
  2. Add the potatoes, fish or vegetable broth, and bay leaves. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Add the salmon chunks and cook for an additional 5-7 minutes until the salmon is cooked through.
  4. Stir in the heavy cream and season with salt and pepper.
