Ingredients

  • 500g mixed mushrooms, sliced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tbsp butter
  • 1/2 cup heavy cream
  • 1/2 cup vegetable broth
  • Salt and pepper to taste
  • 1 sheet of puff pastry

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the sliced mushrooms to the skillet and cook until they release their liquid and become golden brown.
  3. Pour in the vegetable broth and heavy cream, and simmer until the mixture thickens. Season with salt and pepper.
  4. Preheat the oven to 200°C (400°F).
  5. Roll out the puff pastry and line a pie dish with it. Trim off any excess pastry.
  6. Pour the mushroom filling into the pastry-lined dish.
  7. Place the pie in the oven and bake for 25-30 minutes, or until the pastry is golden brown.
  8. Remove from the oven and let it cool for a few minutes before slicing and serving.
