Sup Bilong Buka, also known as Coconut and Pumpkin Soup, is a traditional dish from Melanesian cuisine that is both hearty and comforting. This creamy soup is made with fresh coconut milk, sweet pumpkin, and a blend of aromatic spices, creating a rich and flavorful bowl of goodness.
Ingredients
- 2 cups fresh coconut milk
- 1 small pumpkin, peeled and diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 lemongrass stalk, bruised
- 1 red chili, sliced (optional)
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the coconut milk over medium heat.
- Add the chopped onion, garlic, ginger, lemongrass, and chili. Sauté until the onions are soft and translucent.
- Add the diced pumpkin and vegetable broth. Bring the soup to a simmer and cook for 20-25 minutes, or until the pumpkin is tender.
- Once the pumpkin is cooked, remove the lemongrass stalk and discard.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Season the soup with salt and pepper to taste.
- Serve the Sup Bilong Buka hot, garnished with fresh cilantro.
