Sup Konk (conch Chowder)
Sup Konk, also known as Conch Chowder, is a traditional dish from the Turks and Caicos Islands. This hearty and flavorful chowder is made with fresh conch, vegetables, and spices, creating a delicious and comforting meal.
Ingredients
- 2 lbs fresh conch, cleaned and diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, chopped
- 2 tomatoes, diced
- 4 cups fish or vegetable broth
- 1 cup coconut milk
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp chopped fresh cilantro
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the carrots, celery, and bell pepper, and cook until the vegetables start to soften.
- Stir in the diced conch and cook for a few minutes.
- Pour in the broth and coconut milk, then add the tomatoes, thyme, bay leaf, salt, and pepper.
- Simmer the chowder for 45-50 minutes, or until the conch is tender.
- Remove the bay leaf, adjust the seasoning if needed, and stir in the fresh cilantro before serving.
