Ingredients

  • 2 lbs fresh conch, cleaned and diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 4 cups fish or vegetable broth
  • 1 cup coconut milk
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp chopped fresh cilantro

Instructions

  1. In a large pot, sauté the onion and garlic until fragrant.
  2. Add the carrots, celery, and bell pepper, and cook until the vegetables start to soften.
  3. Stir in the diced conch and cook for a few minutes.
  4. Pour in the broth and coconut milk, then add the tomatoes, thyme, bay leaf, salt, and pepper.
  5. Simmer the chowder for 45-50 minutes, or until the conch is tender.
  6. Remove the bay leaf, adjust the seasoning if needed, and stir in the fresh cilantro before serving.
