Ingredients

  • 2 large eggplants, diced
  • 1 cup groundnut (peanut) butter
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cayenne pepper
  • 4 cups vegetable broth
  • Salt to taste

Instructions

  1. In a large pot, sauté the onions and garlic until softened.
  2. Add the diced eggplants and cook until they begin to soften.
  3. Stir in the groundnut butter, tomatoes, cayenne pepper, and vegetable broth. Bring to a simmer.
  4. Cover and cook for 45 minutes, stirring occasionally, until the stew thickens and the flavors meld together.
