Ingredients
- 1 cup groundnut paste
- 1 pound okra, chopped
- 1 onion, chopped
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon chili powder
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the groundnut paste over medium heat for 5 minutes.
- Add the chopped okra, onion, and tomatoes to the pot and cook for another 5 minutes.
- Stir in the tomato paste, chili powder, and vegetable broth. Season with salt and pepper.
- Simmer the stew for 30 minutes, stirring occasionally, until the okra is tender and the flavors have melded together.
