Ingredients
- 1 cup groundnuts, finely ground
- 2 cups mixed vegetables (such as okra, eggplant, and spinach), chopped
- 1 onion, finely chopped
- 2 tomatoes, diced

- 1 teaspoon chili powder
- Salt to taste
- 2 cups cooked rice, for serving
Instructions
- In a large pan, heat the vegetable oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the ground groundnuts to the pan and stir continuously for 5-7 minutes until they release their oils and become fragrant.
- Add the mixed vegetables and diced tomatoes to the pan, and stir-fry for another 10-12 minutes until the vegetables are tender.
- Season the stir-fry with chili powder and salt to taste, and mix well.
