Ingredients
- 2 cups groundnuts (peanuts), finely ground
- 1 pound fresh spinach, chopped
- 1 onion, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon ground cayenne pepper
- 1 teaspoon paprika
- 1 teaspoon salt
- 4 cups vegetable broth
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onions and cook until translucent.
- Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Stir in the ground groundnuts and cook, stirring frequently, for about 10 minutes until it turns golden brown.
- Add the diced tomatoes, cayenne pepper, paprika, and salt. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the stew to a simmer. Let it cook for 15-20 minutes, stirring occasionally.
- Add the chopped spinach to the stew and cook for an additional 5 minutes until the spinach is wilted.
- Adjust the seasoning if needed and serve the Supakanja hot with rice or bread.
