Ingredients

  • 2 cups groundnuts (peanuts), finely ground
  • 1 pound fresh spinach, chopped
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 4 cups vegetable broth

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onions and cook until translucent.
  2. Add the minced garlic and grated ginger, and cook for another 2 minutes.
  3. Stir in the ground groundnuts and cook, stirring frequently, for about 10 minutes until it turns golden brown.
  4. Add the diced tomatoes, cayenne pepper, paprika, and salt. Cook for 5 minutes, stirring occasionally.
  5. Pour in the vegetable broth and bring the stew to a simmer. Let it cook for 15-20 minutes, stirring occasionally.
  6. Add the chopped spinach to the stew and cook for an additional 5 minutes until the spinach is wilted.
  7. Adjust the seasoning if needed and serve the Supakanja hot with rice or bread.
