Ingredients

  • 1 lb okra, chopped
  • 1 lb mixed seafood (shrimp, fish, and/or crab)
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, chopped
  • 1 cup vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cayenne pepper
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions, garlic, and scotch bonnet pepper. Cook until the onions are soft.
  2. Add the tomatoes and tomato paste, and cook for 5 minutes.
  3. Add the okra and vegetable broth. Cover and simmer for 20 minutes.
  4. Add the mixed seafood, cayenne pepper, salt, and pepper. Simmer for an additional 10 minutes, or until the seafood is cooked through.
  5. Serve the supakanja hot with rice or crusty bread.
