Supakanja (okra And Seafood Stew)
Supakanja is a traditional Gambian stew made with okra and a variety of seafood. This flavorful dish is a popular choice for family gatherings and special occasions.
Ingredients
- 1 lb okra, chopped
- 1 lb mixed seafood (shrimp, fish, and/or crab)
- 1 onion, chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1 scotch bonnet pepper, chopped
- 1 cup vegetable broth
- 2 tablespoons tomato paste
- 1 teaspoon ground cayenne pepper
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the onions, garlic, and scotch bonnet pepper. Cook until the onions are soft.
- Add the tomatoes and tomato paste, and cook for 5 minutes.
- Add the okra and vegetable broth. Cover and simmer for 20 minutes.
- Add the mixed seafood, cayenne pepper, salt, and pepper. Simmer for an additional 10 minutes, or until the seafood is cooked through.
- Serve the supakanja hot with rice or crusty bread.
