Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the diced pumpkin, turmeric, and cumin. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes, or until the pumpkin is tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
- Stir in the coconut milk and season with salt and pepper to taste.
- Serve the soup hot, garnished with a drizzle of coconut milk and a sprinkle of ground black pepper.
