Supu Ya Mbaazi (spiced Lentil Soup)

Ingredients

  • 2 cups dried red lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, sauté the onion, garlic, and ginger until fragrant.
  3. Add the turmeric, cumin, and coriander, and cook for another minute.
  4. Pour in the vegetable broth and add the lentils. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the lentils are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh cilantro.
