Supu ya Mbaazi, or Spiced Lentil Soup, is a traditional dish from Maasai Cuisine that is both hearty and flavorful. This soup is perfect for a cozy night in or as a starter for a special meal.
Ingredients
- 2 cups dried red lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 6 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, sauté the onion, garlic, and ginger until fragrant.
- Add the turmeric, cumin, and coriander, and cook for another minute.
- Pour in the vegetable broth and add the lentils. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
