Ingredients

- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 4 cups vegetable broth
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the cumin, paprika, turmeric, salt, and pepper, and cook for 2 minutes.
- Add the diced tomatoes and cook until they start to break down.
- Drain the soaked chickpeas and add them to the pot.

- Reduce the heat, cover the pot, and simmer for 30 minutes or until the chickpeas are tender.
- Stir in the chopped spinach and cook for an additional 5 minutes.
