Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 onion, chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- Salt to taste
- 4 cups vegetable broth
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, grated ginger, ground cumin, ground coriander, turmeric, cayenne pepper, and salt. Cook for 2 minutes, stirring constantly.
- Add the diced tomatoes and cook for another 5 minutes, until they start to break down.
- Drain the soaked chickpeas and add them to the pot. Pour in the vegetable broth and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30-35 minutes, or until the chickpeas are tender.
- Adjust the seasoning if needed and serve the stew hot, garnished with fresh cilantro.
