Supu Ya Samaki (zanzibar Seafood Soup)

Ingredients
- 500g mixed seafood (shrimp, fish, calamari)
- 2 tomatoes, chopped
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 green bell pepper, diced
- 1 red chili pepper, finely chopped
- 2 cups coconut milk
- 4 cups fish or vegetable broth
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion, minced garlic, and chopped chili pepper. Sauté until the onion is translucent.
- Add the curry powder and turmeric, and stir for 1-2 minutes to release the flavors.
- Add the chopped tomatoes and diced bell pepper. Cook for 5 minutes until the vegetables are softened.
- Pour in the fish or vegetable broth and bring the soup to a simmer.
- Add the mixed seafood and coconut milk. Simmer for 15-20 minutes until the seafood is cooked through.
- Season with salt and pepper to taste.
- Serve the Supu ya Samaki hot, garnished with fresh cilantro and accompanied by crusty bread or rice.
