Ingredients

  • 4 garlic cloves, minced
  • 1/2 cup dry white wine
  • 2 cups fish or seafood stock
  • 1/4 cup olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon saffron threads
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic. Cook until the vegetables are softened, about 5 minutes.
  2. Add the tomatoes, paprika, and saffron. Cook for another 5 minutes, stirring occasionally.
  3. Pour in the white wine and simmer for 2 minutes to cook off the alcohol.
  4. Add the fish stock and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes.
  5. Gently add the fish fillets and shrimp to the pot. Cook for 5-7 minutes, or until the fish is opaque and the shrimp are pink and cooked through.
  6. Season with salt and pepper to taste. Serve the suquet de peix hot, garnished with chopped parsley.
