Ingredients
- 1 lb firm white fish fillets, such as cod or halibut
- 8 large shrimp, peeled and deveined
- 1 onion, chopped
- 2 tomatoes, diced
- 1 red bell pepper, sliced
- 4 garlic cloves, minced
- 1/2 cup dry white wine
- 2 cups fish or seafood stock
- 1/4 cup olive oil
- 1 teaspoon paprika
- 1/2 teaspoon saffron threads
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the tomatoes, paprika, and saffron. Cook for another 5 minutes, stirring occasionally.
- Pour in the white wine and simmer for 2 minutes to cook off the alcohol.
- Add the fish stock and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes.
- Gently add the fish fillets and shrimp to the pot. Cook for 5-7 minutes, or until the fish is opaque and the shrimp are pink and cooked through.
- Season with salt and pepper to taste. Serve the suquet de peix hot, garnished with chopped parsley.
