Surinamese Chicken Satay (Saté Ajam)

Ingredients

  • 1.5 lb boneless, skinless chicken thighs, cut into 1-inch strips
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/4 tsp turmeric
  • 1/4 cup coconut milk
  • 1/4 cup creamy peanut butter
  • 2 tbsp lime juice
  • 1/4 cup water
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine soy sauce, brown sugar, garlic, coriander, cumin, turmeric, and coconut milk. Add the chicken strips and marinate for at least 1 hour in the refrigerator.
  2. Preheat the grill to medium-high heat.
  3. Thread the marinated chicken strips onto the soaked skewers.
  4. Grill the chicken skewers for 6-8 minutes, turning occasionally, until cooked through and slightly charred.
  5. While the chicken is grilling, make the peanut sauce. In a saucepan, combine peanut butter, lime juice, water, and salt and pepper. Heat over low heat, stirring constantly, until the sauce is smooth and heated through.
  6. Serve the grilled chicken skewers with the warm peanut sauce.
