Surinamese Chicken Satay (Saté Ajam)

Ingredients
- 1.5 lb boneless, skinless chicken thighs, cut into 1-inch strips
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1/4 tsp turmeric
- 1/4 cup coconut milk
- 1/4 cup creamy peanut butter
- 2 tbsp lime juice
- 1/4 cup water
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine soy sauce, brown sugar, garlic, coriander, cumin, turmeric, and coconut milk. Add the chicken strips and marinate for at least 1 hour in the refrigerator.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken strips onto the soaked skewers.
- Grill the chicken skewers for 6-8 minutes, turning occasionally, until cooked through and slightly charred.
- While the chicken is grilling, make the peanut sauce. In a saucepan, combine peanut butter, lime juice, water, and salt and pepper. Heat over low heat, stirring constantly, until the sauce is smooth and heated through.
- Serve the grilled chicken skewers with the warm peanut sauce.
