Surinamese Corn Soup (Maïs Soep)

Ingredients
- 4 ears of fresh corn, kernels removed
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- Salt and pepper to taste
- 2 tablespoons chopped fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the carrots and potatoes, and cook for 5 minutes.
- Stir in the corn kernels, vegetable broth, cumin, turmeric, salt, and pepper.
- Simmer for 20 minutes, or until the vegetables are tender.
- Remove from heat and let the soup cool slightly.
- Using an immersion blender, blend the soup until smooth.
- Adjust the seasoning if needed.
- Serve hot, garnished with chopped cilantro.
