Surinamese Corn Soup (Maïs Soep)

Ingredients

  • 4 ears of fresh corn, kernels removed
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the carrots and potatoes, and cook for 5 minutes.
  3. Stir in the corn kernels, vegetable broth, cumin, turmeric, salt, and pepper.
  4. Simmer for 20 minutes, or until the vegetables are tender.
  5. Remove from heat and let the soup cool slightly.
  6. Using an immersion blender, blend the soup until smooth.
  7. Adjust the seasoning if needed.
  8. Serve hot, garnished with chopped cilantro.
