Surinamese Saoto Soup

Ingredients

  • 1 whole chicken, cut into pieces
  • 8 cups chicken broth
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 stalks lemongrass, bruised
  • 1 inch ginger, sliced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/4 cup soy sauce
  • 1/4 cup lime juice
  • 8 oz bean sprouts
  • 4 hard-boiled eggs, sliced
  • 1/2 cup fried onions
  • 1/4 cup chopped cilantro
  • Cooked rice, for serving

Instructions

  1. In a large pot, bring the chicken broth to a boil. Add the chicken pieces, garlic, onion, lemongrass, ginger, turmeric, cumin, and coriander. Reduce heat and simmer for 45 minutes, or until the chicken is cooked through.
  2. Remove the chicken pieces from the pot and shred the meat. Discard the bones and return the shredded chicken to the pot.
  3. Stir in the soy sauce and lime juice. Simmer for an additional 10 minutes.
  4. Divide the bean sprouts, hard-boiled eggs, fried onions, and cilantro among serving bowls. Ladle the hot soup over the ingredients in each bowl.
  5. Serve the Saoto Soup with cooked rice on the side.
