Surinamese Saoto Soup
Surinamese Saoto Soup is a traditional dish from the diverse cuisine of Suriname, a country in South America with a rich culinary heritage influenced by African, Indian, Javanese, Chinese, and Dutch flavors.
Ingredients
- 1 whole chicken, cut into pieces
- 8 cups chicken broth
- 3 cloves garlic, minced
- 1 onion, chopped
- 2 stalks lemongrass, bruised
- 1 inch ginger, sliced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/4 cup soy sauce
- 1/4 cup lime juice
- 8 oz bean sprouts
- 4 hard-boiled eggs, sliced
- 1/2 cup fried onions
- 1/4 cup chopped cilantro
- Cooked rice, for serving
Instructions
- In a large pot, bring the chicken broth to a boil. Add the chicken pieces, garlic, onion, lemongrass, ginger, turmeric, cumin, and coriander. Reduce heat and simmer for 45 minutes, or until the chicken is cooked through.
- Remove the chicken pieces from the pot and shred the meat. Discard the bones and return the shredded chicken to the pot.
- Stir in the soy sauce and lime juice. Simmer for an additional 10 minutes.
- Divide the bean sprouts, hard-boiled eggs, fried onions, and cilantro among serving bowls. Ladle the hot soup over the ingredients in each bowl.
- Serve the Saoto Soup with cooked rice on the side.
