Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/3 cup rice vinegar
  • 3 tablespoons sugar
  • 1 teaspoon salt

Instructions

  1. Rinse the sushi rice in a fine-mesh strainer until the water runs clear.
  2. Combine the rice and water in a medium saucepan and bring to a boil.
  3. Reduce the heat to low, cover, and simmer for 15 minutes.
  4. In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves.
  5. Transfer the cooked rice to a large bowl and fold in the vinegar mixture. Let it cool to room temperature before using for sushi.
