Ingredients
- 2 cups sushi rice

- 1/3 cup rice vinegar
- 3 tablespoons sugar

Instructions
- Rinse the sushi rice in a fine-mesh strainer until the water runs clear.
- Combine the rice and water in a medium saucepan and bring to a boil.
- Reduce the heat to low, cover, and simmer for 15 minutes.
- In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves.
- Transfer the cooked rice to a large bowl and fold in the vinegar mixture. Let it cool to room temperature before using for sushi.
