Instructions

- In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
- In a small bowl, mix the rice vinegar, sugar, and salt. Heat in the microwave for 30 seconds, then stir to dissolve the sugar.
- Transfer the cooked rice to a large bowl and fold in the vinegar mixture. Let the rice cool to room temperature.
- Arrange the cucumber and avocado slices on a serving platter. Spoon the seasoned sushi rice on top.
- Sprinkle the shredded nori, pickled ginger, and sesame seeds over the rice. Serve with soy sauce on the side.
